    Ketchup... i mean catch up...

    So it's been a lOOOOng minute since my last blog post! Slacking, I know.

    What have I been up to?

    Mommy news front -

    I have been dealing with pregnancy symptoms earlier than with nugget's. I've just entered my 30th week into my pregnancy and I've been dealing with issues sleeping, waddling sooner, gaining more weight than my previous, feeling more tired - just to name a few.

    My nugget is turning the big 2 on the 23rd and we are throwing a small family Cars themed birthday party next weekend!! OMG, 2??? Time has zoomed!

    I've been trying to get all the themed items together so I'm not rushing to get stuff together at the last minute. I plan to have Cars 2 playing through out the house, an art station for painting and coloring, a dessert area called Sarge's surplus of sweets and a station for temporary tattoo application.  Here are some pictures that I found during my research to have during his birthday!

    Eating Healthy (Prego Edition)

    I will be 7 months on the 28th of October and I feel like the pregnancy cravings have been getting the best of me!! So I want to make a goal from this point forward to eat healthier and be on a pregnancy diet that restricts me from eating too much of the "good" stuff that's bad for me!

    With some research, here is the ideal amount of each food groups that should be consumed on a daily basis -


    The six MyPyramid food groups

    Grains: 6 to 8 ounces a dayGenerally, an ounce of grains equals a slice of bread or half a bun, 1 small corn or flour tortilla, 1 cup of ready-to-eat cereal, or 1/2 cup of cooked cereal, rice, or pasta. For at least half of your daily grains, choose whole grain varieties like whole wheat bread or brown rice. Whole grains contain the most fiber, vitamins, and nutrients.
    Fruits: 2 cups a day
    Vary the color of the fruit you eat and choose fresh over canned – many prepackaged varieties are preserved in sugary liquid. Bonus: The fiber in fruit helps head off two common side effects of pregnancy, hemorrhoids.

    Vegetables: 2 1/2 to 3 cups a day
    As with fruit, fresh is best for fiber and vitamins. For maximum nutrition, vary the color of the vegetables you choose. Broccoli, for example, is packed with folate, calcium, and B vitamins. Sweet potatoes provide vitamin A, vitamin C, and fiber.

    Meat and beans: 5 1/2 to 6 1/2 ounces a day
    This amount is about 2 servings that are each the size of a deck of cards. Choose lean meat and limit fish to 12 ounces per week. (More than that may expose your baby to harmful levels of mercury.)
    Milk, yogurt, and cheese: 3 cups a dayIn the MyPyramid plan, a cup of dairy equals 1 cup of milk or yogurt, 1 1/2 ounces of natural cheese, and 2 ounces of processed cheese. Dairy products, in general, are a great source of calcium and protein. Low-fat varieties give you all the nutrients you need without the extra fat.
    Oils: 6 to 8 teaspoons a day
    The best sources include canola oil, olive oil, safflower oil, fatty fish, avocados, nuts, seeds, and olives. Note: Avocado is a fruit but most of its calories come from fat, so it's included in the oils category.
    Discretionary calories: 165 to 360 a day This MyPyramid plan budgets 165 to 360 "extra calories" that you can spend as you choose! They could be used on extra servings of grains (like a little more pasta), extra protein at meals, whole milk instead of low-fat, some sugar in your decaf iced coffee, or an extra scoop of ice cream.

    A Healthy Banana Nut Muffin

    This past rainy Monday, I decided to make some 'healthy' Banana Nut Muffins. It was great warm with a mug of hot chocolate!!

    I tweaked the original recipe (the recipe below is what I used) to be all whole wheat flour, adding 1/2 cup more of applesauce, handful of crushed walnuts and handful of semi-sweet chocolate chips.

    Nugget Events...

    It's been a minute since I've posted about the Nugman.


    Here are some recent things...

    On one of the mornings we were in the backyard, our sprinkler caused a little puddle to accumulate in a spot on the pavement and Nugget decided to sit and downward dog pose his head into the puddle. A definite SMH!! sheesh!

    Healthy Chicken Katsu

    I've been overloading on the unhealthy goods and have been wanting different dishes that aren't so good on the calories. So I found a recipe for Baked Chicken Katsu with sauce.

    I had to tweak the recipe a tad.

    • I didn't brine the chicken.
    • Substituted panko bread crumbs (which I realized I ran out of when I was about to start coating) with crushed rice crispy cereal.
    • Used whole wheat flour
    • No cabbage salad.

    Prenatal Gummy Yummy...

    Since week 5 of my pregnancy, I've had some major morning sickness and taking my prenatal vitamin (CitraNatal) has not helped in coping with it. My doctor said that I can make do with taking Nugget's multivitamins for the mean time. So for the past 4 months, my toddler and I have been taking the same vitamins. 


    We were running low on our vitamins and I went to Walmart to get some more. I grabbed the children's multivitamins and I saw clear bottle caught my eye that had the words - PRENATAL. I picked it up and saw it was gummy prenatal.

    Yesterday parents, hubby, nugget and I went to a new Greek restaurant for an early dinner. My parents came here once before and they wanted us to try this place out. Hubby and I usually go to the Fat Greek with decadent desserts and Kyklos Greek Cafe in the Galleria mall.
