A Healthy Banana Nut Muffin

This past rainy Monday, I decided to make some 'healthy' Banana Nut Muffins. It was great warm with a mug of hot chocolate!!

I tweaked the original recipe (the recipe below is what I used) to be all whole wheat flour, adding 1/2 cup more of applesauce, handful of crushed walnuts and handful of semi-sweet chocolate chips.

Healthy Chicken Katsu

I've been overloading on the unhealthy goods and have been wanting different dishes that aren't so good on the calories. So I found a recipe for Baked Chicken Katsu with sauce.

I had to tweak the recipe a tad.

  • I didn't brine the chicken.
  • Substituted panko bread crumbs (which I realized I ran out of when I was about to start coating) with crushed rice crispy cereal.
  • Used whole wheat flour
  • No cabbage salad.

Mama Spa Minute...

I'm in need of a major refreshening up! On a mom's time and PT budget, everything is homemade style!

So after putting nugget down for his 1st nap, I got things together for my homemade masks - face and hair! This was all spur of the minute and I used only things I had in my pantry/fridge.


Face Mask - Honey/Oatmeal


  • I mixed 1:1 of honey and steel cut oatmeal (about one and one half tablespoon of each - honey and freshly blended oatmeal in powder form). 
  • Scoop the mask with fingers; its consistency will be really thick and gooey.
  • Liberally applied all over your face and neck; don't need to rub into skin. 
  • Ensure you steer clear of placing into and under your eyes.
  • I left the mask on for 30 min. 
  • Be careful, this mask isn't the 'drying' kind so it will drip all over the place. Make sure you watch out for your eyes too, there were instances where the honey was dripping into my eyes. Just wipe away.
